We are please to present our first American Whiskey. For Scotch, it’s pretty much standard practice to gloat about how many years the spirit has been aged for. However Bourbon’s a different beast.
When a spirit ages, it gains flavour and colour as it moves in and out of the wood barrel. The speed at which it does this has everything to do with the climate in which it’s being stored. Because Kentucky has much hotter summers than Scotland, bourbon companies claim it ages far faster. In fact its three to four times as fast, and suggest that bourbon hits its absolute peak in eight to twelve years—a figure that would be considered young by Scotch standards.
That said we are confident that we bottled the 8 Year Old Heaven Hill at its optimal maturity.
Heaven Hill Distilleries Inc. Originally known as “Old Heavenhill Springs”, was founded in Bardtown, Kentucky by a group of investors and the “Shapira Brother’s” to produce and market bourbon & Premium American Whiskeys.
At the time it was a speculative new company founded in 1935 with no brands, no available stock of whiskey and at the height of the Great Depression. However today Heaven Hill Distilleries is now the Seventh largest spirits supplier in the US and the second largest holder of aging Bourbon Whiskey in the world.
Bourbon Barrel – Cask Number 152736
Bourbon Barrel – Approximately 190 litres in size, bourbon barrels are sent over from America after they have been used to mature bourbon whiskey. Before they are used however, they are toasted or charred on the inside. This process caramelises the wood sugars and influences the spirit with distinctively sweet tastes such as caramel and vanilla.
Soft and mild cheeses such as Camembert or goats’ cheese will compliment this whisky perfectly.
Meat & Fish
Fresh fish, especially salmon or trout. Seafood with samphire, oysters, crab or lobster would also make a very good match. The linseed oil notes of this cask, with the touches of smoke, will also be complimented by lightly smoked fish.
This whisky would also compliment top quality beef like Wagyu or Kobe.
A dark golden honey colour.
Notes of honey, vanilla, corn, caramel, and oak are the main extracts, whereas there are more faint hints of citrus, brown sugar and all spices.
Smooth and lightweight consistency, with an oaky taste at the forefront, in adjacent to the sweet honey and spice with a hint of cinnamon & tropical fruits.
A warm and melting impression, with a medium length finish. Combined with sweet caramel and floral notes along with a dominant oaky taste.
